Lamb Birria Tacos

Chef Sancho has done it again! We present lamb tacos done in the style of the Jalisco region in Mexico.
We slowly-marinated leg of lamb to make the meat tender yet packed with flavor. We serve the tacos with a portion of the marinate; a rich lamb consommé made from chile guajillo and ancho chilies. You can pour a bit of this spicy Mexican-style au jus over the meat to subtly enhance the flavor or just dip the whole taco in to really soak in the flavor! Served with diced onions, coriander, chili flake and lime.
